I have made these muffins several times but not as the recipe is written. The reason being that I never have apple juice concentrate on hand. So, I have substituted the concentrate with either applesauce, ground up pears, or ground up bottled peaches that have been drained. All three have turned out well and been very moist and tasty.
Apple Muffins
Mix together: 2 C flour
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp ginger
1/4 tsp allspice
1/4 tsp nutmeg
1 tsp salt
1 C sugar, (optional
Mix together and add to dry ingredients, mixing just until moistened
2 large eggs
2/3 C buttermilk
1 C thawed apple juice concentrate (or substituted fruit)
2 small apples, peeled and chopped
1/3 C chopped nuts (optional
Spoon into greased muffin tins and bake for 25 minutes at 375 degrees. Cool on rack.
